A BRIEF HISTORY OF VOLARE
"Volare" means "to fly" in both the Spanish and Italian language. Nicola Paterson and Martin Corless opened the restaurant in 1997 in the function room of The Queen's Head Pub, in Scissett, before buying their own premises in Skelmanthorpe in 2000.
Nicola and Martin have been together since 1992 and are business partners as well as being married. Whilst Nicola manages the front of house at Volare, Martin is the head chef.
Martin has been a chef for over three decades. He completed his training on the very chic and beautiful Mediterranean island of Sardinia. He worked in one of the world's most exclusive resorts, the Costa Smerelda, catering for the rich and famous. On returning to his roots in Huddersfield and ready to burst with ideas, Martin worked in many top Italian, Spanish & French restaurants in the area, even becoming a pub landlord for a while! His dream and ambition was to open his own restaurant where he could let all his ideas unfold into a unique culinary experience. All the dishes on the menu are Martin's signature dishes but he particularly enjoys cooking shellfish and all his sauces are to die for!
Skelmanthorpe and the surrounding area, has got to be one of the best places to live or work whilst the Mediterranean has such a diverse and interesting culinary history. A great combination! With the correct research and dedication, Martin has found it so rewarding, grasping the culinary know-how of the lesser known regions of the Med and introducing something a tad different, back here in Yorkshire.
At present, Nicola is on maternity leave with the couple's second child. Although it is obviously not possible, at the moment for her to be working as the front of house manager, her presence is felt in the high standards maintained by the new management team, headed by Emma, Holly and Charlotte who are currently in command of the service. As Nicola and Martin live above the restaurant, it is easy for Nicola, on a daily basis, to support the business, from behind the scenes and to keep all Volare's staff on their toes!
The style inside the restaurant is warm, relaxing and welcoming with friendly waiting on staff, dedicated to all your requirements. With a back drop of atmospheric, Mediterranean music coupled with candle-lit tables, it won't be long before the aromatic cuisine whisks your mind back to that last enjoyable holiday abroad!
Nicola and Martin are determined to stay in Skelmanthorpe and are dedicated to their business and enjoy all it has to offer. Always on the look out for ways to improve and perfect, their approach is definitely hands-on. Customer feedback is of paramount importance and the aim of Volare is to please and delight all who dine there.
